Last minute - One Pot Tuscan Chicken Ingredients Last minute - One Pot Tuscan Chicken  Ingredients
* 2 tablespoons butter or ghee
* 3 large boneless skinless chicken breasts, cut in half (for faster cooking you can cut up raw chicken first)
* 1 lb Potatoes quartered
* Approx. 1 cup cherry tomatoes quartered 
* 1 large/2medium zucchini or summer squash cubed 
* 3-6 cloves garlic, minced
* 1 teaspoon dried oregano or tried basil
* 1/2 cup chicken broth or water
* 1/2 cup heavy cream
* 1/2 cup shredded Parmesan cheese + extra for garnish
* Basil for garnish, optional

Instructions
* In a large skillet, heat butter over medium heat. Sprinkle salt and pepper on chicken. Place chicken in the pan and brown each side 5-7 minutes. Remove and put on a plate. 
* Add to the pan, potatoes, tomatoes, squash, garlic, oregano, and cook for 3-5 minutes, until squash begins to soften. 

* Pour in broth/water and heavy cream. Stir in until mixed. 

* Return chicken to the pan and bring to a simmer over medium heat. Cover, reduce heat to medium-low and simmer for 15-20 minutes. Cook until the potatoes are soft and the chicken has an internal temperature of 165° F
* Before serving, sprinkle in Parmesan and mix. 
* Scoop in to bowls and garnish with Parmesan and fresh basil.

Set out a pallet of watercolors and brushes for morning.

Easy, last minute meal. Stew meat thaws quickly in Easy, last minute meal. Stew meat thaws quickly in a bowl of water. You can use this meat for tacos, burritos bowls, or served over sautéed veggies. 

Ingredients
* 3-4 pounds stew meat
* 1 teaspoon salt
* 1 teaspoon pepper
* 2 Tablespoons butter
* 1/2 cup water
* 1/4 cup apple cider vinegar
* 1/4 cup lemon or lime juice
* 2 teaspoons garlic, minced
* 1 Tablespoon ground cumin
* 1 Tablespoon dried oregano
* 1/4 teaspoon ground cloves
* 3 bay leaves
* 1/4 cup of diced onions

Instructions
1. Turn Instant Pot to Sauté setting and add butter until sizzling.
2. Add in stew meat and sprinkle with salt and pepper. 
3. Sear each side quickly.
4. While beef is simmering, Add in water, apple cider vinegar, lemon or lime juice, garlic, cumin, oregano, cloves and bay leaves. Stir with the beef. Mix well.
5. Add in onions And bay leaves. Turn off the sauté function.
6. Close the lid and turn the steam valve to seal.
7. Set Instant Pot to high, 30 minutes.
9. Once the timer completes, let the pressure cooker “Natural release” until pressure valve drops.
10. Remove meat and shred.
11. Discard bay leaves.
13. Return shredded meat to liquid and stir.
14. Allow beef to sit in sauce for 10 minutes to absorb flavors before serving.
16. Serve with tortillas for tacos

- quality watercolors … do yourself a favor and get those watercolors with ALL the colors. It’s okay if they mix them up, mama! The varied l, vibrant colors make watercolor painting fun!
