Chicken Fajitas

She followed her heart, created her own blog, and most importantly, she is a faith driven wife and mother. She is the kind of gal I want in my circle! Today she is sharing a recipe for chicken fajitas!

Fajitas are most definitely a staple at our house and a favorite at our local Mexican restaurant. There are so many flavors and textures rolled all into one and they are absolutely a meal in themselves. What I would love to do is show you exactly how to create a fresh and healthy take on your average fajitas that are super easy to make and crazy good for you.

When preparing any meal, it is so important to use quality ingredients. Local farmer’s markets are a great resource for buying quality ingredients, especially for a meal like fajitas. Fresh produce and meat always taste better, in my opinion, and we are also supporting our community of local farmers without spending more than we would at the grocery store. Win, win!

Today we want to keep it super simple by using a fajita trifecta: fresh peppers, onions, and tomatoes. If you and your family like more or different veggies, steak, or even shrimp, throw them in! We want to make sure that we are giving you recipes that are completely customizable to your family’s likes. I will say, however, that if you are a chorizo lover (like my man) you can definitely add it, but not only will it add a bit of spice, it is sausage, so it will have quite a bit of grease and can be high in calories and fat. So, if someone in your house really wants to add chorizo to their fajitas, maybe fry it in a separate pan.

Once we have our veggies sliced up thick and our chicken cut into strips, we are going to add the spices. In a large mixing bowl, you will add your chicken, spices, lime juice, and a little bit of olive oil together and mix them well. We are olive oil addicts, but if you have a different type of oil you prefer to cook with go ahead and use it. I do want to encourage you to steer clear of vegetable or canola oils as they have higher fat contents and are just plan not that good for you.

Don’t worry when the chicken begins to look white; the acid from the lime will actually do this to the chicken making it really tender as well. But you don’t want to really “marinate” this for any longer than about 10-20 minutes or the acid will continue to break down the chicken making it mushy, eww.

Now that we have everything ready, heat a large skillet to medium high heat and add your meat and veggies. Cook everything together until the meat is cooked through and the veggies are soft. If you like your veggies a little crisper wait to add them until the meat is nearly done.

When the meat is cooked through and the vegetables are done to your likeness, add about 2-3 tablespoons of fresh cilantro and mix in. Remove the fajita mixture from the heat and it’s ready to go!

I am slightly obsessed with our homemade, whole-wheat tortillas and will always choose them over regular, store-bought tortillas, but I think I may have recently found an even better alternative, which I thought was impossible, until now. We have started wrapping our meat into lettuce shells instead! Think PF Chang’s Lettuce Wraps but with a fajita twist.

I have entered an entire world of yum that I never knew possible. By using the lettuce instead of the tortilla, we are cutting out a lot of carbs, which, if I’m being honest, I clearly am not too concerned about usually, but we are also adding an amazing crispy, crunch to our fajitas that I ab-so-lutely LOVE! It adds a great freshness that is perfect for the warmer spring and summer months, but still amazing year-round.

I cannot wait for y’all to enjoy these incredibly fresh and surprisingly healthy chicken fajitas. And now that we are all in with our local farmer’s markets we can have fun and enjoy the preparation as well. If you can think of some other great alternatives, let us know! Fresh and Healthy Chicken Fajitas

Ingredients

  • 3 lbs. boneless, skinless chicken breast
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ¼ tsp. cayenne pepper
  • 3 tbsp. cumin
  • 2 tbsp. six pepper blend
  • 3 tbsp. olive oil
  • Juice of 1 lime
  • 4 cloves garlic, minced
  • 6-7 roma tomatoes
  • 1 white onion
  • 2-3 green bell peppers
  • 3 tbsp. fresh cilantro
  • Whole wheat tortillas or 1 head of lettuce

Directions

  1. Slice tomatoes, onion, and bell peppers into large chunks and set aside.
  2. Cut chicken into thin strips and transfer to a large mixing bowl.
  3. Add salt, pepper, cayenne, cumin, six pepper blend, olive oil, lime juice, and garlic to chicken and mix well. *optional- marinate chicken 20-30 minutes*
  4. Heat large skillet over medium/high heat and transfer chicken mixture and vegetables to skillet.
  5. Cook over medium/high heat until chicken is cooked through and vegetables are tender.
  6. Add 3 tbsp. cilantro to skillet and mix in.
  7. Remove from heat.
  8. Fill whole wheat tortillas or lettuce shells with fajita mixture.
  9. Enjoy with your favorite fajita toppings!
