Paleo Coconut Macaroons

Happy National Cookie Day! Well actually, it is on Sunday and I wanted you to have this recipe ahead of time! We can still cheer about it today, though!

My goals for this Christmas Season are simple 1.) Don’t go totally broke buying Christmas decorations and dog sweaters. 2.) Find healthy alternatives whenever possible so I don’t start 2017 feeling like a puffer fish. Simple, right?! 

 

Welp, I decided that this Paleo Coconut Macaroon recipe was a great way to celebrate National Cookie Day without all of the added sugar. I love simple recipes, too!

I think macaroons are such a beautiful cookie. You could dress them up for your next holiday potluck by adding a few Christmas colored sprinkles after you drizzle the chocolate. Or wrap them individually in cellophane with a pretty bow as a cute, healthy sweet treat gift!

About 30 seconds – 1 minute; Whisk in lemon zest & vanilla. ; Add in coconut & stir until it is well coated by the egg white mixture.; Line baking sheet with parchment paper.; Drop large tablespoons of the mixture onto the baking sheet & form into mounds. ; Bake macaroons until golden, about 15-20 minutes.
