This weekend was all about prepping and getting ready for an extraordinary week. “A Sunday well spent leads to a week of content!” is such a true quote. We take time on Sunday to prep food that can be eaten in a hurry throughout the week. Fast food without the added calories.
Each week I take time to create a menu that is different and typically created around what is on sale at the grocery store. Unless it is an absolute must, I only stick to produce and meats that are on sale. This does two things, first it helps us save money. I love asparagus, but I don’t love asparagus when it is $5 a pound. Second, it keeps variety in our meals so that our “healthy meals” don’t become “boring meals”. Variety is the spice of life and without it we would get burnt out.
This week I will be posting about how I grocery shop and meal prep each week, but for now I will share the recipe you are here for.
Sweet potato fries are a favorite in our home. This recipe is simple, tasty, and easy, so there is no need to reach for the frozen bag at the grocer. With this recipe, you have complete control over how and what goes in to how your fries are made. We have used this recipe since 2011 and I figured it was time to share.
Sweet Potato Fries
4 Medium Sweet Potatoes (I have better luck with actual sweet potatoes than I do with yams. Yams are pictured, but sweet potatoes stay a little bit more firm.)
1 Egg White
3 Tablespoons of Olive Oil or Coconut Oil
1 tsp. Cumin
1 tsp. Garlic Powder (not garlic salt)
1/4 tsp. Sea Salt
1/4 tsp. Fresh Ground Pepper
Spray a cookie sheet with non-stick spray and pre-heat your oven to 400 degrees.
There you have it! Simple and easy sweet potato fries made from scratch!
