Eat More Purple

Cabbage that is! Okay, okay, before you write me off as crazy, hear me out!

Red Cabbage is loaded with essential vitamins and antioxidants. It is an excellent source of vitamin C and magnesium. One cup of red cabbage has only 28 calories, but is packed with 56% of the daily recommended vitamin C! For my radiant, glowing, beauty gals… to make collagen, your body needs vitamin C. Collagen is the connective tissue that gives support, strength, and structure to our muscles, SKIN, bones, and other tissues. We all know too that vitamin C is essential for a healthy immune system!

Preparing for this post I did more research. Some articles claim that drinking red cabbage juice can help get rid of headaches. While I am usually up for anything in the name of blog post research, that one I am going to have to pass on. I do however have an amazing recipe for you to try! The best news, I have adapted it to fit our clean eating lifestyle and it fits perfectly in the 24 Day Challenge plan. It is a great, clean recipe you can make to go along side any meal!

The recipe, Red Cabbage Salad

Ingredients:

  • 1 Head of Purple Cabbage
  • 3/4 Cups Olive Oil
  • 1 Cup Red Wine Vinegar
  • 3 packets of Stevia
  • 2 tsp Sea Salt or Pink Himalayan Salt
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Cayenne Pepper
  • 2 tsp Black Pepper
    • 1 Gallon Size Bag
    • 1 Glass Jar, or something to mix your dressing in

Chop the purple cabbage in to thin strips and put inside the Ziploc bag.

In a glass jar, mix the remaining ingredients. Put the lid on the jar, shake well, and pour the liquid over the cabbage in the Ziploc bag.

Seal the bag and shake the cabbage to coat all of the pieces in liquid. ((PS I realize now the photo above isn’t the best quality. My settings were a little off! Sorry about that))

Store the bag in the fridge for 4-24 hours. The more the cabbage sits in the dressing, the better it is. This is a great dish to take to a potluck, also! It helps YOU stay on track and it is a tasty recipe everyone is sure to enjoy!
