Happy October! I cannot believe we are already welcoming October in to our year! It seems like just yesterday we were beginning 2016! October officially kicks off the HOLIDAY SEASON. Each store is being filled with Halloween decor, faux fall leaves, and before you know it, Christmas ornaments will stock the shelves.

The Holiday Season is no joke for our waist line. Wouldn’t you agree?! As if it wasn’t already a challenge staying on track with our nutrition. Now we introduce pumpkin spice flavored sweet treats, peppermint chocolate swirl this or that, and a whole lot of extra sweetness.

Balance is our focus this holiday season and I promise you, I have some tricks up my sleeve. First, let’s start with a festive Halloween recipe you can make for your family this month. Here goes, kicking off the Holiday Season!

Halloween Dinner Ideas

These Spanish Stuffed Jack O. bell peppers are a perfect, balanced dinner to serve up for your family. The chicken cooks in the CrockPot on low while you are at work and is a lean protein source. The bell pepper is a perfect way to sneak in extra, tasty vegetables. My favorite, the quinoa is a great complex carb that is easily digested! This recipe is so much more than boring chicken cooked in the oven.

Peppers – Chicken stuffed bell peppers. – chicken breasts, cumin, garlic salt, chili powder, black pepper, can diced tomatoes with green chilies, orange bell peppers, of Quinoa, Shredded Chicken from Above, can black beans rinsed and drained, Add chicken to the Crockpot, season the chicken, and cover with diced tomatoes.; Cook on low for 6-8 hours or high for 4-6 hours.; Shred chicken in the sauce. Do not drain.; After the chicken has cooked- Bring a large pot of water to boil.; While you are waiting for the water to boil, rinse peppers, slice off the tops and hollow out the insides, be sure to remove any seeds and the white part inside.; Using the bell pepper you cut off from the top, dice the bell peppers and mix them in to the chicken mixture.; Use a small knife to cut out a jack-o-lantern face in the bell pepper.; When water is boiling, put the peppers in the water and allow to boil for about 5-7 minutes.
