Simple, wholesome, and easy to make kale, cucumber, and melon salad. This salad is the perfect side dish to add to your summertime dinner. This is a great way to use up the abundance of summertime fruits and vegetables, also.

Types of Kale
There are several varieties of kale to choose from. The most common kale in the grocery store or at your farmer’s market is curly kale and Lacinato Kale, also known as dinosaur kale. Others include savoy kale, red Russian kale, Redbor Kale, and Chinese Kale. The two most common kales, curly and lacinato are my favorite for this recipe.

Massaging the salad dressing in to the leaves of the kale and letting sit for 15 minutes or so, helps soften the leaves and loosens up some of the density of the leaves.
The ingredients of this salad are simple and easy to find, but the combination of the sweetness of the watermelon and tangy dressing is delicious.
