Quickie: Protein Thin Mint Recipe

Looking for a quick and easy recipe? You are going to LOVE these protein thin mints. A healthy version of a childhood favorite. These protein thin mints have all of the flavor of our favorite, crispy Girl Scout Cookie, but they are lower in sugar and a great protein packed snack.

Quick and easy protein thin mint recipe on PanzaAvenue.com Ingredients:

  • 3/4 Cups Chocolate Flavored Protein Powder (I use Advocare Protein Powder, here)
  • 6 Tablespoons Melted Coconut Oil
  • 2 Tablespoons Unsweetened Coconut Flakes
  • 2.5 Tablespoons Unsweetened Cocoa Powder
  • 1 teaspoon Mint Extract
  • 4 Packets Stevia

Mix all of the ingredients in to a bowl. The mixture will have a few bumps after it is mixed well, it is the coconut shavings. 🙂

Scoop in to molds or in to the bottom of a cupcake tin. Place in the freezer for 7 minutes or until firm.
